Tuscan Olives: our extra virgin olive oil comes from the best Tuscan olives: Leccino, Moraiolo and Frantoio. Each olive is hand-picked using traditional methods to ensure a pure, authentic and flavor-rich product.
We harvest the olives using the “brucatura” technique, the oldest and most manual method that ensures careful selection and superior quality of the harvest, avoiding damage and preserving all the properties of the olives.
In the hours after harvesting and before taking the olives to the mill, we prevent pressing by gently placing them in perforated crates.
Cold Extraction: extraction takes place cold, between 24°C and 27°C to preserve the flavor, fragrance and nutritional properties of the oil as much as possible, avoiding oxidation.
The Food &Drink Report 2024 confirms that oil is much more welcome than wine as a thank you for a dinner. The reasons? it is more durable than a bottle of wine, which runs out over the course of a dinner party, can be used by hosts later, and is not likely to age while waiting for the right occasion.

We offer two main variants of extra virgin olive oil:
- Our exclusive EVO Ellisse oil in 500 ml bottle: a balance of excellence and quality;
- Our superior EVO oil in 1l, 3l or 5l cans: ideal for everyday use.
The two oils differ in the time between harvesting and pressing the olives (a maximum of 8-12 hours for Ellisse bottled oil and a maximum of 16-24 hours for oil in cans) and the mill that processes them.
Each stage of processing is carefully monitored to ensure the highest quality product. Our oil is the result of a process that combines tradition and innovation, with an ongoing commitment to sustainability and quality.
